When the islands shut down, Chef Jason's JMR Food Concepts opened. Chef Jason is a classically trained chef who studied at California Culinary Academy in San Francisco, CA. While chef was born and raised on the island of Oahu, his culinary adventures brought him to many different regions where he was able to hone his skills and expand his horizons to build JMR Food Concepts. JMR Food Concepts is the culmination of years of training, experience, passion, and an open mind which showcases Chef Jason has a flair for combining flavors from some of his favorite voyages including Mexico and the Bahamas while utilizing both homegrown and local ingredients to support Hawai'i's local businesses.
Chef Jason was hit with adversity when his employment halted during the onset of the pandemic. He drew from within and followed a long-standing inner desire to bring his creativity to fruition with his next-level island cuisine. His global inspiration brought the island of O'ahu such concepts as the "flavor bubble". His creativity stretched from enhancing cocktails with a burst of visible flavor, to providing an upscale dining experience with special effects that could mirror a magic show in Las Vegas.
It is no surprise that these visual food stimulations caught the attention of many foodies across the island of O'ahu. One in particular named Queenie (of Queenie's Foodie Journey) was so intrigued, she not only developed a business partnership but a friendship as well with Chef Jason where they coproduced videos showcasing these awe-inspiring meals. While Chef Jason is known for his famous dish, the 24K Magic Ribs which feature succulent, fall-off-the-bone ribs topped with flakes of gold, his roots are based on local cuisine with a twist. When Chef Jason originally began creating meals for JMR, he focused on his upbringing and featured local favorites such as Smoked Pork Belly, Oxtail Lau Lau, and Dynamite Opihi. These catered dishes became so popular that chef was in demand and expanded on these concepts to feature more of his signature dishes which spotlight his use of both edible flowers and gold.
These engaging dishes caught the attention of another local company, Sanctuary Hawaii, which wanted to further augment the culinary experience by providing a dream-worthy setting to dine. Chef Jason once again partnered with a local company to cater parties serving anywhere between 2-100 guests in a beach setting which could be as simple as a picnic blanket or as extravagant as a chandelier gazebo worthy of a Vogue cover.
His dedication to creating the best meals did not stop with these two partnerships.
For his next collaboration, he chose to look even closer to home and joined forces with his sister Courtney to create delectable desserts that could only escalate the already stunning atmosphere. Coco's Cake Hawaii was founded during the pandemic as well when Chef Jason's sister began her home-based dessert business while raising her two children. Coco's provides many desserts, however, her specialty is Japanese cheesecake. Coco's Japanese cheesecake's popularity has allowed her to expand her creativity as well and transform her original design into push pops, cupcakes, and even wedding cakes. This family collaboration has allowed Chef Jason's vision of a private dining experience to come to fruition.
When Chef Jason isn't inventing new dishes, he also shares his expertise as a consultant with hotels, restaurants, and businesses to expand and upgrade their menus. Chef Jason also focuses on supporting as many local businesses and entrepreneurs as well. He is also currently united in a project with Queenie's Food Journey to create a Diabetic friendly cookbook that features flavorful dishes safe for diabetics where they can enjoy their favorite meals guilt-free. He is dedicated to his craft and hopes to return one day to the World Famous James Beard House in New York where he previously worked as a Sous Chef.
